Peaches are the most refreshing summer fruit, and if you give them a little extra flavour they are even more delicious!

Ingredients (For 2-4 people)

2 peaches, peeled and sliced
2 cups of fresh yoghurt (can be 10% fat)
1/2 cup sugar
1 pinch of salt
1 teaspoon vanilla extract


Put the peaches in the blender and mix well. Scrape the mix from the sides of the blender. Mix again until the mixture becomes smooth.
Add the remaining ingredients and mix until it becomes a soft and smooth cream.
Pour the mixture into an ice-cream machine and work for about 25 minutes until the mixture has frozen properly
If you do not have an ice cream machine, pour all the ingredients into the blender and mix for 2-3 minutes until the mixture is smooth.
Pour the mixture into a metal bowl and leave in the freezer for 6 hours.
For the best results, remove the ice cream from the freezer once or twice and mix well with a spoon.
