Great, unique recipe for wonderful, juicy peaches full of flavour!
6 large peaches
500 g almond biscuits (“”cookies”” or similar)
300 g sugar
300 g egg whites
A few tablespoons of Icing sugar
1 tea cup white rum
1 tea spoon cocoa powder
1 vial of vanilla powder or a few drops of vanilla essence
Method: Wash the peaches, cut them in half and use a teaspoon to scoop out almost half the flesh. Put the cookies in a blender with the peach flesh, sugar, rum, vanilla and cocoa, and beat them until mixed. Beat the egg whites until stiff. Add to the biscuit mixture gradually, stirring with a spoon until mixed together. Put the peaches on a buttered baking tray. Heat the oven to 160 °. Divide the mixture into the center of the peaches with a teaspoon. Sprinkle with a little icing sugar and bake in the oven for about 20 minutes. Serve slightly warm.
